Géline de Touraine chicken
The “Géline de Touraine” is an integral part of the Touraine region’s gastronomic tradition and a top breed of French heritage poultry. Widely present in the farmyards of the 1920s, the bird all but disappeared in the 50s until INRA* and a handful of passionate breeders brought the race back to life under the name of “La Dame Noire”, or The Black Lady. Pork from Touraine: 9 pig breeders from the department of Indre-et-Loire have formed an association to promote their craft, their products, their lands. To ensure perfect traceability, the farmers are committed to nourishing their “Pink King” pigs solely with their own farm-grown cereal products, nutritional minerals and vitamins.
Rillettes from Tours are distinguished by an IGP, or protective geographical status. Whether pale blond or brown in colour, they are created by slowly tewing pieces of pork. The best rillettes contain both finely shredded meat and nice chunks of pork. IGP guidelines require a high-quality selection of meat be used.
